Simple Arugula Salad

This Simple Arugula Salad is super easy and simple to make. With just 5 minutes and minimal ingredients, you will have the perfect side dish to any meal. The nutty, peppery taste of the arugula combined with the tarte lemon juice and smooth olive oil creates the perfection combination. After tasting you will not believe how easy this was to make.

What exactly is Arugula?

Arugula has become increasingly popular in salads, but Arugula is actually not a lettuce. It belongs to the same family as broccoli, kale and cabbage. Arugula is also low in calories but packed with nutrients and antioxidants making this a healthy choice! You can find arugula in most grocery stores in the same section that you will find lettuce.

Ingredients needed for Simple Arugula Salad.

This recipe calls for just 5 ingredients that you will most likely already have on hand. This includes Arugula, olive oil, fresh lemon juice, kosher salt and ground black pepper.

To make this you will just need to combine the olive oil, lemon juice, salt and pepper together in a mixing bowl. Once combined, toss in the arugula until it’s fully coated. Taste the salad and add more salt and pepper to taste if needed and there you have it! Yep, it’s that simple.

What pairs well with this simple arugula salad.

You can literally pair this with any dish! It’s perfect as side to any breakfast, lunch or dinner entree. This can be served with an omelet, a breakfast sandwich, pasta, pizza, chicken. The list can literally go on forever!

Variations to this Simple Arugula Salad

This recipe how it’s written does not have any additives to the salad but that does not mean that you can’t add to this salad. Here are a few suggestions that can spruce it up:

  • Garnish with some parmesan cheese.
  • Toss in some pine nuts
  • Top with some bacon bits
  • Toss in some Roma tomatoes

These are just a few suggestions, but the list goes on and on…

  • 5 oz Arugula
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper

Instructions

  • In a medium bowl, add in the olive oil, lemon juice, salt and pepper. Toss in the arugula until it is fully coated.
  • Garnish with parmesan cheese if you prefer or serve as is. Serve immediately.
