Simple arugula salad

Arugula tossed with olive oil and lemon juice and seasoned with salt and pepper.

Ingredients

  • 5 oz Arugula
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 1/2 tsp kosher salt
  • 1/2 tsp ground black pepper

Instructions

  • In a medium bowl, add in the olive oil, lemon juice, salt and pepper. Toss in the arugula until it is fully coated.
  • Garnish with parmesan cheese if you prefer or serve as is. Serve immediately.
